Chive Pockets (Jiu Cai He Zi)

Chive pockets, jiu cai he zi, griddle-fried with garlic chive and egg filling.

Chives , Eggs , Griddle

Best for: The big golden pocket from northern kitchens.

Jiu cai he zi — “chive boxes” — are northern China’s hand-held comfort: a simple hot-water dough folded around a mound of garlic chives, scrambled egg, and glass noodles, then fried on the griddle until the crust blisters gold. They are bigger and heartier than dumplings, and the filling is seasoned after the chives go in, never before, so they stay bright instead of weeping. Because the filling carries egg, these file with the egg dishes rather than the vegetarian shelf, per the house rule.

Griddle: Flat-top griddle or large cast-iron griddle over medium heat on the grill; 375°F. Equipment: Griddle, rolling pin, wide spatula, skillet for the eggs.

Ingredients

Servings: 4 servings; 8 pocketsPrep: 25 minutesCook: 12 minutes

Rest: 2 minutes. Total: 39 minutes.

Dough

  • 2 1/2 cups all-purpose flour
  • 3/4 cup hot water
  • 1/2 teaspoon fine table salt

Filling and frying

  • 4 eggs, beaten
  • 3 tablespoons neutral oil, divided, plus more for the griddle
  • 8 oz garlic chives, cut into 1/2-inch pieces
  • 1 oz dried mung bean vermicelli, soaked, drained, and cut short
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon fine table salt
  • 1/4 teaspoon ground white pepper

Directions

Stir the flour and salt with the hot water into a dough, knead for 8 minutes until smooth, cover, and rest while you make the filling (inside the prep time).

Scramble the eggs in 1 tablespoon of the neutral oil in a skillet into soft, small curds; cool completely. Cooling matters — hot eggs wilt the chives.

Toss the cooled eggs with the garlic chives, vermicelli, soy sauce, sesame oil, remaining 2 tablespoons of neutral oil, salt, and white pepper. Season at the last minute so the chives stay dry.

Divide the dough into 8 pieces and roll each into a 6-inch round. Pile filling on one half, fold over, and crimp the edge shut with a fork or a rope fold.

Heat the griddle to 375°F and film it with neutral oil. Fry the pockets for 3–4 minutes per side, pressing gently, until deeply golden and blistered, with the filling steaming hot inside.

Rest for 2 minutes — the filling is molten — then serve whole or halved, with black vinegar for dipping if you like.

Grilling tip: Salt the chive filling at the very last second: salted chives weep within minutes, and a wet filling makes a soggy pocket.
