Smoked Dragon Eggs

Smoked dragon eggs, bacon-wrapped and smoked, one cut in half to show the egg, beef, and bacon layers.

Eggs , Bacon , Beef

Best for: The appetizer that stops the cookout — slice one open at the table and watch everybody lean in.

A dragon egg is a hard-boiled egg in a seasoned ground-beef blanket, wrapped in bacon and smoked until the bacon turns crisp and mahogany. Slice it open and there it is: golden yolk, white, beef, bacon — layers like something a dragon would guard. This one comes to us from CritterSimpFood (@crittersimpfood on TikTok), whose smoked dragon eggs video stopped our scroll; ours follows the classic build, written our way.

Smoker: Indirect heat with smoke; 250°F. Equipment: Smoker or covered grill set for indirect heat, instant-read thermometer, tongs.

Eggs

  • 6 large eggs

Beef blanket

  • 1 lb ground beef (80/20)
  • 1 teaspoon fine table salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar

Wrap and finish

  • 12 slices bacon, regular cut
  • 2 tablespoons BBQ rub
  • 1/4 cup BBQ sauce, for glazing (optional)

Directions

Put the eggs in a pot, cover with cold water, and bring to a boil. Take the pot off the heat, cover, and let the eggs sit for 10 minutes. Cool them in cold water and peel them carefully.

Mix the ground beef with the salt, black pepper, garlic powder, smoked paprika, and brown sugar until just combined. Divide the beef into 6 equal portions.

Flatten each portion into a thin oval. Set a peeled egg in the center and wrap the beef around it, pinching the seam closed and smoothing the surface so the egg is completely covered.

Wrap each beef-covered egg with 2 slices of bacon, overlapping as you go, and sprinkle the outside all over with the BBQ rub.

Set the smoker to 250°F. Smoke the eggs for 1 1/2 to 2 hours, until the bacon is crisp and deep mahogany and the beef layer reaches 160°F. If you are glazing, brush with BBQ sauce in the last 15 minutes.

Rest the dragon eggs for 10 minutes. Halve them lengthwise and serve hot, cut side up, so the layers show.

Grilling tip: Chill the wrapped eggs for 20 minutes before they go on the smoker — cold beef holds its shape and the bacon stays put while the heat sets everything.
