Mongolian Lamb Skewers — Genghis Khan

Mongolian cumin lamb skewers piled on flatbread with shaved onion and lemon.

Best for: Fierce, fast skewers and a good story — cumin-forward lamb with flatbread and raw onion.

The legend says the horsemen of Genghis Khan grilled meat on their iron shields held over campfires, and the steppe’s most famous food tale — meat tenderized under a rider’s saddle — gets told about his Mongols and about Attila’s Huns alike. The record is quieter: armies that lived on horseback lived on lamb, dried meat, and whatever a fire could cook fast. What survives for certain is the flavor the Mongolian steppe made its own: lamb, salt, and a heavy hand with cumin.

Our grilled take is cumin-forward lamb skewers at fierce heat — cousins to the Chinese chuan’r elsewhere on this site, but built the Mongolian way, with coriander in the mix and flatbread and raw onion alongside instead of a dipping sauce.

Grill: Direct high heat. Equipment: Grill, metal skewers (flat ones hold best), instant-read thermometer. Course: Main dish.

Ingredients

Servings: 4Prep: 20 minutesCook: 10 minutes

Total: 30 minutes

The lamb

  • 1 1/2 pounds boneless lamb leg or shoulder, cut into 3/4-inch cubes, some fat left on
  • 1 tablespoon neutral oil

The steppe spice

  • 1 tablespoon whole cumin seed, lightly crushed
  • 1 teaspoon ground coriander
  • 1 teaspoon chili flakes, plus more to finish
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper

To serve

  • Warm flatbreads
  • 1 small onion, shaved paper-thin
  • Lemon wedges

Directions

Season the lamb hard. Toss the lamb cubes with the oil, cumin, coriander, chili flakes, salt, and pepper until every piece is coated. Rest at room temperature 30 minutes (or refrigerate up to 4 hours) while the grill heats — skewers forgive a marinade measured in minutes.

Skewer them snug. Thread the lamb onto skewers, pieces touching but not crushed together, keeping a few fatty pieces in each run so they baste the rest.

Grill over fierce heat. Lay the skewers over direct high heat and grill 8 to 10 minutes, turning every couple of minutes, until the edges char and the centers reach 145°F.

Rest them briefly. Rest the skewers 3 minutes on a warm platter, tented — the juices settle and the spice crust stays put.

Dust and pile. Shower the skewers with a pinch more chili flakes and crushed cumin, then pile them onto the warm flatbreads.

Serve the steppe way. Scatter the shaved onion over the top, squeeze lemon over everything, and let everyone tear, wrap, and eat with their hands.

Grilling tip: Lamb skewers want real heat and dry surfaces — pat the meat dry before seasoning, and don’t oil the grates to a shine; a little sticking early on is what builds the char before the meat releases.
