Best for: A smoky, sticky Halloween party platter.

These are chicken wings dressed for Halloween in a dark blackberry glaze with a touch of chipotle heat. They grill gently first, then finish over direct heat for crisp edges.

Grill: Two-zone, 400–425°F. Equipment: Tongs, small grill-safe saucepan, brush, thermometer. Course: Appetizer.

Ingredients

40–50 minutes Rest: 5 minutes. Total: 60–70 minutes.

  • 2½ pounds chicken wing flats and drumettes, tips removed
  • 1 tablespoon neutral oil
  • ¾ teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ cup seedless blackberry preserves
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon finely minced canned chipotle in adobo
  • 1 tablespoon soy sauce
  • 2 tablespoons water

Directions

Preheat the grill. Pat wings thoroughly dry. Toss with oil, salt, garlic powder, paprika, and pepper.

Place wings over indirect heat, close the lid, and grill for 30–35 minutes, turning halfway.

Meanwhile, combine preserves, vinegar, chipotle, soy sauce, and water in a small saucepan over moderate heat. Simmer for 3–5 minutes until glossy and brushable.

Divide sauce between a brushing bowl and a clean serving bowl. Move wings to direct heat and cook 6–10 minutes, turning frequently, until the skin crisps and the thickest meat reaches at least 165°F without the thermometer touching bone.

Return wings to indirect heat. Brush with the grilling portion of glaze and cook covered for 2–3 minutes to set it. Discard unused brushing glaze.

Rest wings 5 minutes. Toss lightly with the clean reserved sauce or serve it alongside. Serve warm.

Grilling tip: Apply the sweet glaze after crisping the skin. It should look deep burgundy and glossy, not blackened or burnt.

Allergens: Soy and typically wheat in soy sauce; check labels.
