Halloween , Steak Skewers , Roasted Garlic , Red Pepper , Sirloin
Best for: A Halloween dinner with bold, savory flavor.
Juicy steak skewers wear a glossy red pepper glaze and come with a mellow roasted garlic dip. The vampire name is playful; the garlic and smoky beef are worth making year-round.
Grill: Two-zone, 400°F. Equipment: Foil, blender, metal skewers, tongs, thermometer. Course: Main dish.
Ingredients
45–55 minutes Rest: 3 minutes. Total: 68–78 minutes.
- 1 whole head garlic
- 1 tablespoon olive oil, divided
- 1½ pounds sirloin steak, cut into 1¼-inch cubes
- ½ teaspoon fine sea salt, for steak
- ¼ teaspoon black pepper
- ¾ cup drained roasted red peppers from a jar
- 2 tablespoons tomato paste
- 1 tablespoon red wine vinegar
- 1 tablespoon honey
- ½ teaspoon smoked paprika
- ¼ teaspoon fine sea salt, for glaze
- ½ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- ⅛ teaspoon fine sea salt, for dip
Directions
Preheat the grill. Slice ¼ inch off the top of the garlic head, drizzle with 1 teaspoon oil, and wrap in foil. Grill over indirect heat for 35–45 minutes until the cloves are soft. Unwrap carefully and cool enough to handle while preparing the steak.
Blend roasted peppers, tomato paste, vinegar, honey, paprika, and glaze salt until smooth. Divide into two bowls: half for brushing, half kept clean for serving.
Toss steak with remaining 2 teaspoons oil, steak salt, and pepper. Thread loosely onto 8 metal skewers.
Squeeze softened garlic into a bowl and mash. Mix with yogurt, mayonnaise, lemon juice, and dip salt. Refrigerate until serving.
Grill skewers over direct heat for about 8–10 minutes, turning every 2 minutes. Brush with the grilling portion of glaze during the final 2 minutes, moving to indirect heat if it scorches. Cook steak to 145°F; discard unused brushing glaze.
Rest skewers for at least 3 minutes. Drizzle with the clean reserved glaze and serve with the garlic dip.
Grilling tip: Leave small gaps between cubes so heat reaches their sides. Check the center of the thickest cube without touching the skewer.
Allergens: Milk, egg; check mayonnaise and jarred peppers.
